Vegetables can be so bland and boring, especially in the winter. So rather than suffer this I’ve created a really simple recipe to make them more exciting! Grilling lettuce and avocado may not sound logical but it makes them so much more appealing, and I’ve made a dressing with sharp juice from griddled lemons and punchy mustard, balanced out with a little maple syrup for sweetness. It’s the work of mere minutes, and there’s something very satisfying about making great big grill lines along the veg, adding so much flavour in the process!

Looks good! We usually grill year round, even in the snow, so this would be one to try.
