Griddled Lettuce & Avocado, Lemon & Mustard Vinaigrette

Vegetables can be so bland and boring, especially in the winter. So rather than suffer this I’ve created a really simple recipe to make them more exciting! Grilling lettuce and avocado may not sound logical but it makes them so much more appealing, and I’ve made a dressing with sharp juice from griddled lemons and punchy mustard, balanced out with a little maple syrup for sweetness. It’s the work of mere minutes, and there’s something very satisfying about making great big grill lines along the veg, adding so much flavour in the process!

You can find this recipe in the Dec/Jan issue of Appetite Magazine, or simply by just clicking here!

I’m off to Copenhagen on Tuesday for a few days, so expect some Scandi-inspired recipes on my blog soon, and follow my Instagram and Twitter (links below) to keep up with where I am!
