For this recipe I really wanted to create a new version of my overnight oats recipe already on the blog, but adding something a bit new and different. And this ‘something’ happens to be lemon curd! Sweet, sour and creamy, I love spreading it on toast or even just eating it straight from the jar, so I’ve incorporated it into this recipe with great results! Indulgent & creamy, it’s a treat worth making, perhaps even for Valentine’s Day! I’ve used a great, British-made lemon curd from The Mercers of Yorkshire, and they’ll be selling their products at the Good Food Show in Harrogate this April! Unfortunately though the product isn’t vegan-friendly, so if you wish to make it so I recommend using lemon zest and a good drizzle of agave nectar instead.
Serves 1-2
- Porridge oats. 70g
- Chia seeds. 1 tsp
- Desiccated coconut. 1 tbsp
- Light coconut milk. 250ml
- Lemon curd. 1 heaped tbsp
Measure all the ingredients into a measuring jug, mix together well then cover and chill in the fridge for several hours or overnight. When you’re ready to eat, mix it all up again, adding more coconut milk if it’s too solid for your liking, and pour into a bowl. Top with your favourite combo of fruits, nuts & seeds, and enjoy!

sounds yummy! i love chia overnight oats – they are such a satisfactory start to the day. personally i prefer using coconut water as it makes the dish a bit lighter in taste, although i am defo not one to turn down a good serving of coconut milk either 🙂
