Thai-Spiced Sweet Potato Soup

There’s a chapter in a Nigella Lawson cookbook somewhere, entitled ‘The Solace of Stirring’, and I firmly believe that cooking can be very therapeutic in this manner. Throwing ingredients in a pan, cooking & blending may seem a little dull, but I can often find myself needing to do some unhurried cooking, where the stirring is actually rather relaxing. This recipe is not groundbreaking in any particular way, but because the result is extremely tasty and the process of creating it is rather nice, I feel it well deserves its place on the blog. Feel free to play around with the components too, adding & subtracting as you see fit!

Serves 2-3

  • Garlic. 1 clove
  • Ginger. 2 inch piece
  • Red chili. 1/2
  • Fresh coriander. 1 large handful (stalks & leaves separated)
  • Sweet potatoes. 3
  • Red pepper. 1/2
  • Coconut oil. 1 tbsp
  • Coconut milk. 400ml can
  • Vegetable stock. 600ml
  • Lime. 1
  • Soy sauce. 1 tbsp
  • Fish sauce. 2 tsp (optional)
  • Black pepper

Using a microplane grater (or similar), finely grate the garlic, ginger & red chili. Finely chop the coriander stalks. Peel the sweet potatoes & roughly chop, along with the de-seeded red pepper.

In a crock pot/large saucepan, heat the coconut oil on a medium heat. Add the grated garlic, ginger & chili, stir & cook for 1 min. Add the coriander stalks, sweet potatoes & red pepper, mix well then turn the heat down a touch and cook with lid on for 10 min, stirring occasionally.

Add the coconut milk, vegetable stock, zest & juice of 1 lime, soy sauce, fish sauce (if using) and some black pepper. Stir well to break up any coconut lumps, and turn up the heat to bring to a boil. Once boiling, turn the heat down to low & simmer with the lid ajar for 30 min. Blend until smooth (I use a stick blender for convenience) and taste for seasoning, adding more soy/lime juice/fish sauce/salt & pepper as you see fit. Roughly chop the coriander leaves, and stir into the soup. Ladle generously into bowls for serving, and ultimate enjoyment.
